Grilled Tri-Tip with Oregon Herb Rub

Submitted by: CHIEFWMS
Home Town: Dayton, Ohio, USA
Tri-tip is a California central coast specialty, claimed to have been first introduced in the Santa Maria area. This recipe adds dill, sage, and rosemary to the basic Santa Maria recipe. Tri tip is a flavorful cut of meat that really shines when it is slow grill-roasted or smoked. Great with a green salad or layered onto French bread for a juicy beef sandwich.

Tasso Ham

Submitted by: Cleveland Graham
I used to make this in a restaurant where I worked. I have modified it for the home cook. You definitely need curing salt for this recipe. When you buy the pork butt, ask the butcher for the curing salt. Mine just gave me the salt I needed. I make this about twice a summer. It's the hit of any BBQ!!

A good way to spruce up the old hamburger for the family, with great flavor! For a cheese burger, I suggest either muenster, or provolone cheese to complete the taste.

If you love bratwurst, you'll love this simple, but delicious recipe. Pre-cook your brats in a large pot with beer, heaps of butter, and sliced onions. Then put them on the grill until brown and irresistible. Makes four servings.

Pork butt receives a vigorous, spicy rubdown, then is slowly smoked until tender. The meat is then pulled and simmered in a piquant vinegar sauce.
