I am continuously asked to bring this dip for parties and family get-togethers. People gather around the platter until it's gone. Five layers of Mexican-inspired delights are topped by a layer of vegetables, then smothered in cheese and garnished with black olives. The vegetables may be varied according to taste.

Chicken Fiesta Salad

Fajita seasoning makes this salad feisty. The chicken is rubbed with it before grilling, and the wonderful bean/corn/salsa mixture is cooked in a bit of it as well. Add lots of greens, onions and tomatoes, and you have an amazing salad.

We love to tailgate and watch the Bowl games, and are always trying to come up with clever things to do to our biggest rivals up north, the Michigan Wolverines.
