Thai Noodle Salad

Udon noodles are cooked and combined with cucumbers, sprouts, green onions, carrot and lots of freshly chopped mint. Then everything is tossed with a spicy ginger/peanut sauce and garnished with roasted peanuts. Makes six generous servings.

'When I worked as a cook on the ferries that travel between Bellingham, Washington and southeastern Alaska. I served this salad to our passengers and crew, and it always received compliments,' notes Patricia Morgan of Haines, Alaska. 'It's best chilled overnight.'

A spicy, Thai-inspired soba noodle treat that's great for picnics and barbecues. For a Japanese-inspired version, omit the pepper flakes, peanuts, and cilantro; and add toasted sesame seeds.

Those tidy packages of Ramen noodles seem to be quite versatile. Here they turn a broccoli salad into something special. The seasoning packet and a bit of oil and vinegar make the dressing, and the crunchy noodles combined with sunflower seeds, peanuts and green onions, do wonders for the broccoli slaw.

When you need a bright and tasty pasta salad, toss rotini pasta with a mixture of oil, sugar and a ramen noodle flavor packet. Thinly sliced carrots and crispy sugar snap peas add color and crunch.

The dressing is herbed and creamy and the salad is full of great veggies - peas, green peppers, onions, and celery. Crunchy too. Ramen noodles and water chestnuts take care of that. Serves twelve. 

Bob's Thai Beef Salad

Rib eye steak is sauteed, sliced, and tossed together with cucumbers and red onions in a piquant dressing of lime juice, chiles and fish sauce. 

Thai Salmon Salad

Freshly-baked salmon is chunked in a bowl with thinly-sliced onions, tomatoes, and chopped, fresh basil. And if this isn't glorious enough, a fragrant, hot and spicy dressing is folded in. Serves six.
