2 pounds fresh green beans, trimmed
6 tablespoons lemon juice
1 medium onion, chopped
3/4 cup olive oil
1 (16 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
2 tablespoons dried parsley
1 cup water
salt and pepper to taste
1 bay leaf

DIRECTIONS
Place the green beans in a pot, and mix in the lemon juice, onion, olive oil, tomatoes, tomato sauce, parsley, water, salt and pepper, and bay leaf. Cook 45 minutes over medium heat, stirring occasionally, until sauce is thickened. Remove bay leaf before serving.

Soooo Yum!!! And healthy the way I made em', I cut waaaaay back on the oil, its not necessary! Used cooking spray to saute onions) Added some minced garlic, used chicken broth instead of water, & they came out GREAT! :)

it was really easy to make but i usually like my green beans on the crunchy side so simmering for 45 minutes was way too long for my taste. however, the sauce was really nice and i added some crushed red pepper flakes to give it a kick. not sure if the sauce would have been as mellow and sweet if i didn't simmer for 45 minutes. maybe next time i will simmer the sauce first and add the green beans in the last 15 minutes or so. the sauce never thickened.

Very nice...I added a pinch of sugar to the sauce and extra lemon juice after it was done. Served with rice, it hit the spot.
