Seven Layer Salad

A glass salad bowl is a must, otherwise your diner guests will miss all the pretty layers. Those layers begin with chopped lettuce and go on from there - onion, peas, shredded cheese, bacon, cauliflower, and finally a creamy parmesan and mayonnaise dressing.

A layered green salad with green peas, celery, bell peppers, Cheddar cheese, and bacon sprinkled over all. For other variations, I have substituted or added some of my own favorite ingredients, such as: carrots, eggs, mushrooms, sprouts, and seeded cucumbers.

Brown sugar gives the mayonnaise dressing a sweet richness, and curry and garlic powder give it a bit of nip. Once the veggies and eggs are sliced, chopped and shredded, you layer the salad, finishing with the dressing on the top. Sprinkle with bacon bits and Parmesan cheese.

Pea Salad I

How could something so tiny be so good. But the peas in this layered salad have a bit of help. There 's also crumbled bacon, Romaine lettuce, Cheddar cheese, sliced hard-boiled eggs, and a sweetened mayonnaise sauce. Chill and serve to eight.
