Confetti Bean Salad
SUBMITTED BY:
Doreen Store
"I shared this recipe with a friend a while back. Now we kid about who will make it when we're attending the same event! No matter who brings the salad, it's always a hit at get-togethers. -Doreen Storz Bloomsburg, Pennsylvania"

I made this for my son's first birthday party and at least 12 people asked for the recipe. It was easy and so very flavorful. I wouldn't change a thing, but you can certainly play with ingredients and flavors to make it more your own. Great recipe!

This was very good! The only beans I used were black beans, which my family likes. I added avocado too! Great to make with a 2 year old!

I like this recipe very much. I changed it slightly, no chickpeas, add frozen edamame, and substitute fresh lemon juice. I don't like chili powder, so cut that out and the cilantro is a must have. It's so pretty, delicious and healthy. Everyone in my family LOVES it. In fact I even saw a neighborhood salad bar selling a version of it and it's very popular there too.

I liked this recipe, very easy, and many people commented on it, and wanted the recipe. Made this a day in advance. Maybe a little too much Balsamic for my taste, otherwise, very good!
