Coconut-Apricot Truffles

Original recipe yield 3 dozen balls

INGREDIENTS (Nutrition)

  • 1 1/2 cups whole, unsalted almonds
  • 2 cups dried apricots
  • 2 teaspoons cinnamon
  • 2 teaspoons almond extract
  • 1/2 cup sweetened shredded coconut

DIRECTIONS

  1. In a food processor with the knife blade, thoroughly combine first four ingredients until the mixture forms a dough-like ball. Using your hands, firmly roll into 1-inch balls. Roll in coconut.
