Black Bean Pasta Salad

INGREDIENTS

  • 8 ounces rigatoni or penne pasta
  • 1 (16 ounce) jar salsa
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 cups (8 ounces) shredded reduced-fat Mexican-blend cheese
  • 1/2 cup chopped green pepper
  • 1 small onion, chopped
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

DIRECTIONS

  1. Cook pasta according to package directions; drain and rinse in cold water. Place in a bowl; stir in the remaining ingredients. Cover and refrigerate for 30 minutes before serving.

FOOTNOTE

  • Nutritional Analysis: One serving (1 cup) equals 203 calories, 5 g fat (3 g saturated fat), 9 mg cholesterol, 538 mg sodium, 28 g carbohydrate, 4 g fiber, 13 g protein. Diabetic Exchanges: 1-1/2 starch, 1-1/2 lean meat.
