Beet, Bean and Apple Salad

"This brightly colored cold salad is a perfect compliment to any meal or a zesty vegetarian meal in itself."

INGREDIENTS (Nutrition)

  • 1 (8.25 ounce) can sliced beets, drained and diced
  • 1 (15 ounce) can cut green beans, drained
  • 1 large Granny Smith apple - peeled, cored and diced
  • 1 teaspoon olive oil
  • 2 tablespoons apple cider vinegar

DIRECTIONS

  1. Combine the beets, green beans and apple in a serving bowl. Stir in olive oil and vinegar. Chill for 1 hour before serving. Serve cold.
