The Magnolia State is a Deep South state situated along the Gulf Coast between Louisiana and Alabama. When viewed on a map, Mississippi’s western border looks something like the metal edge of a spiral notebook, all squiggly lines the result of a meandering Mississippi River gently looping its way to the Gulf of Mexico. Some of the world’s most fertile soil is found in the Mississippi Delta, a rich alluvial plain between the Mississippi and Yazoo Rivers in northwest Mississippi. Historically, the delta has been a prime area for growing sugar, rice, cotton, and soybeans. Mississippi shares with Louisiana a history of Creole cooking and some French influence, particularly in the cooking of the affluent. But it is Mississippi’s flavorful, down-home cooking that takes the prize, including ribs and beans, cornbread, turnip greens, fried catfish and hushpuppies, and Mississippi mud pie.

Salmon Rosemary Burgers

I didn't really care for these. I made them and my daughter and I ate one each and that was that. There were no seconds. I am not sure what it is I didn't like, but I will not be making these again. Thanks anyway.

Sean's Falafel and Cucumber Sauce

Really good recipe. I used the food processor to chop the onion, parsley, and garlic and added the chickpeas and pulsed until they were chopped. The texture was perfect. I also had to omit the cumin and coriander..didn't have those as I don't care for them and don't keep them stocked. I used a spice blend that had both included in it, however. I also upped the cayenne a bit. I used 2 slices of whole-wheat bread, processed until finely ground. I omitted the mayo from the sauce and served the falafel and sauce with fresh tomatoes on greek flatbread. Very yummy...I'll be making again soon and regularly!

I made this for the office, and everyone loved it. I also made the praline sauce found on this site to pour over each slice. Very good. I followed other recommendations and cooked it for longer.
