Toasted Pumpkin Seeds

I've always made pumpkin seeds on the stovetop, but decided to try it this way this year. It was awesome! I subbed cajun seasoning for seasoned salt because I just ran out of Lawry's :(, and it worked great!

Garlicky Baked Butternut Squash

I really liked this! I have never had winter squash before, but I bought one and looked on allrecipes to find a dish. We love garlic, so I thought we would like this, and we did! Followed the suggestion to pierce and microwave the squash (8 min) for easy peeling, and it was still a little difficult to peel and the SMELL almost made me throw it away. ICK. But, I went through with it anyway, and it turned out great. I added the parm 1/2 way through, and when the parm gets a little crispy, those were the BEST bites. Yum. THANKS!!

Marinated Tuna Steak

This was awesome! I had given up on tuna steak because I was tired of the usual spices and/or blackened varieties. This definitely changed my tune!! I really enjoyed it and ate a LOT more tuna than I have in the past. Thanks for a great recipe!

Super easy and soooooo delicious! Was out of garlic, so substituted garlic salt. PERFECT! We substituted grilled chicken! LOVE this recipe!

Jamie's Cranberry Spinach Salad

Wow. I was totally skeptical--how does a salad get all those great reviews? All I have to say is don't knock it till you try it. Why in the world is this so FANTASTIC? I don't know--but it is. (I used 1/2 Splenda instead of all that sugar and no-trans-fat margarine, but the rest is exactly the same.)

Mexican Bean Salad

Fantastic! My only substitution was using 1 tablespoon of Splenda instead of 2 tablespoons of sugar. So, so good. Even my fiance, who does not like beans, ate almost more than me! A great way to eat fiber and have a meatless dish that is so, so filling. I bought chicken, but I didn't even make it--I just ate the salad.

Quinoa and Black Beans

Obviously, I liked this as I prepared this recipe for the second time. I adjusted the liquid to a 1:2 ratio and soaked the quinoa for ten minutes - as per the advise of many reviewers. This time I added drained tomatoes and red, green and yellow peppers. Even better!

Cheese and Sausage Stuffed Zucchini

I went looking for a "vegetable and cheese" dish, and this really exceeded my expectations! To make it lower calorie and lower fat, I used 2% Colby cheese, lowfat cottage cheese, and Italian turkey sausage. I also used 1 can of drained diced tomatoes with Italian seasoning. I also did not cook the zucchini first, and it was just fine, but I used three regular-sized store zucchinis, not huge home grown ones! I thought it was great!

Swiss Cashew Tossed Salad

This recipe is just plain fun! Change it up a little with fresh blueberries, strawberries or orange slices! Used toasted or candied pecans, sunflower seeds, or ramen noodles! Toss on some chow mein noodles for crunch! Grill chicken and lay on top for a summer dinner salad! Play!
