The Land of Lincoln is a vaguely arrowhead-shaped state in the heart of the Midwest. It is home to the third largest American city, Chicago, which sits along the shores of Lake Michigan. The poet Carl Sandburg described Chicago as “the hog butcher for the world.” The city was made so by the invention of refrigerated railroad cars. With refrigeration, meat could be packed in Chicago and shipped in cold cars to the East Coast. In the 1800s, John Deere, an Illinois blacksmith eased the way for agriculture in the Prairie State by devising a better steel-bladed plow capable of cutting through the hard Illinois prairie. Today, Illinois is a major producer of soy, corn, and wheat. In 1943, a couple of Chicago restaurateurs first presented their cheesy, thick-crust pizza to a mostly pizza-puzzled crowd at Pizzeria Uno. Though not an overnight success, Chicago-style deep-dish pizza is today a hit throughout the country. Three years later, just down the road in Springfield, the Cozy Dog Drive-in applied the finishing touch on the corn dog by inserting the first stick into one end of a deep-fried dog! After that, state fair fare would never be the same again.

Cranberry Sauce Chicken II

I wasn't crazy about this. Because of the easy prep and minimal ingredients, however, I wanted to give it a try. I work in Chicago, and am usually not home until sometime b/t 7:00 - 7:30 p.m. on most weekdays, so anything that can be ready to pop into the oven when I walk in the door is a keeper. I prepared this on Thursday night to give the sauce ingredients time to blend together (it allows the onions in the soup mix to soften). Dinner was ready in an instant on Friday evening! In lieu of chicken thighs I used chicken breasts. My bf liked this (which surprises me b/c he HATES fruit, especially cranberry sauce), but he wasn't wowed. I think he'd eat it again, but I woulldn't, so (since I do the cooking), it probably won't make it to our table again. The chicken was dry and bland (except for the sauce). The sauce is yummy over long grain & wild rice and the dish pairs nicely with peas and dinner rolls on the side. Thanks for sharing!

Down Home Baked Beans

OK baked beans. When I told my bf how they were prepared, he was confused. He didn't see the point in using a can of "baked beans" to make "baked beans". I get his point. For all of the prep (minimal, but still a time commitment involved), I would have preferred a can of Busch's. Good, but not WOW! I won't be making these again. Thanks anyways!

Busy Day Barbeque Brisket

An OK brisket. I actually like my recipe for Bar-B-Q beef (sirloin) better. My bf really liked this, but for me, it was just so-so. I thought it would be spicier b/c of the rub (which would have made it number 1 on my list). Because I couldn't find a 3 lb. brisket, I purchased 2 1.5 lb. ones and placed them side by side in my slow cooker. I used Famous Dave's original recipe sauce (I see how you could alter the taste by using different types of sauce - sweet, smoky, spicy, etc.). Followed the recipe to a T except for triming the fat from my brisket (only one of them had any fat layer). When everything was done, I removed all of the fat (and my sauce was fine - not greasy at all). Served on onion rolls with bread & butter pickles and sweet onion and a side of Down Home Baked Beans by MEANJEANNE (also on this site). I'm saving left-overs for wet burritos. Maybe I'll like this better this way. Thanks for sharing!
